Recipe–Linguini Cordon Bleu

This is my spin on the classic Chicken Cordon Bleu.  It has pretty much everything you would find in the original dish, plus pasta.   What’s not to like?


1 block (5.2 ounces) Boursin cheese

1 cup lowfat or reduced fat milk

4 ounces mushrooms, sauteed

6 ounces linguine, cooked

1 large chicken breast, grilled

1 green onion, chopped (optional)

Heat Boursin and milk in a large skillet over medium heat, whisking until smooth.  Continue to heat, whisking occasionally until mixture has thickened, about 5 minutes.  Drain any liquid from the mushrooms (otherwise it will turn your sauce a dirty color) and add to sauce.  Add linguine and toss to combine.  Cook for 2-3 minutes, or until linguine has soaked up some of the sauce.   Remove to a plate and top with grilled chicken and optional green onions.  Serves 2 hungry people.
